With views as good as this, it's no wonder that Istanbul is sprouting restaurant and bar venues in what are traditionally apartment or office buildings. 360 Istanbul takes advantage of the belfry of St. Antoine and panoramic views of the Golden Horn; on a cool summer's eve, there's really no better place to be. The decor is an unexpectedly pleasing amalgam of brick, steel, glass, and velvet; tables, alfresco banquettes, and a lounge area ensure that everybody gets something he or she wants. The Thai and Turkish menu is rather beside the point, although, there are plenty of appetizers and finger foods to hold you over for the real meal. Go early for the best outdoor seating, or arrive late and mill about the wraparound terrace. Reservations are suggested for dinner (main courses 20TL-34TL /$17-$30/£7.60-£13). Open daily noon to 1am.

Not far from the Grand Bazaar is the outdoor living-room-cum-tea-gardens hidden in the courtyard of the old Çorlulu Alipasa Medrese. The tree-filled garden is a perfect way to unwind, with a glass of apple tea and the essence of strawberry in your water pipe while you admire the display of carpets and souvenirs decorating the gardens of the bordering shops. The entrance to the tea gardens is on Yeniçeriler Caddesi near where the road changes names from Divanyolu Caddesi.

This is a sister operation to the majorly successful Vogue, Anna, A'jia, and Da Mario (not all listed here). The formula seems unable to fail. Anjelique takes up the top three floors above Da Mario (creating a dining dilemma). Jazz and soul are played during dining hours, complementing a sensual decor backlit by the nighttime glow of the sea and sky. Dinner is served on the top two floors, while the lower floor is dedicated to the dynamic lounge. Open May through October. Restaurant is open 6pm to midnight, and the bar 7pm to 4am.

This is a popular venue for music concerts full of hip and cosmopolitan chain-smoking Turks in black. There are frequent live concerts so it's a good idea to buy your ticket earlier in the day to avoid the long line. Previous artists included jazz performers Charlie Hunter, Leon Parker, and Harriet Tubman, but more often than not, the musicians are lesser-known imports playing an eclectic (even weird) fusion of music. Whimsical, even irreverent can best describe this funky, smoky and lavender-filled duplex restaurant-cum-nightclub with open-air rooftop terrace. Offering a playlist that runs the gamut "from Abba to Zappa," Besinci Kat (which literally means "Fifth Floor"), bills itself as place for "anyone who's got style, taste and a free mind." Open daily 10am to 2am.

The most popular locale among the new restaurants and cafes around the restored buildings of Franciz Sokagi occupies an early-20th-century schoolhouse. There's a large garden shaded by enormous plane trees, and the food is creative without veering too far off the Turkish culinary map. Choose from an a la carte menu (appetizers and main courses 8TL-28TL/$7-$24/£3-£11) or from a selection of prix-fixe menus, including a "cocktail menu" for those not in the mood for a full meal. Open daily 9am to 2am.

This candlelit rooftop is another one of Istanbul's exceptional panoramic locations and not surprisingly a popular magnet for the sophisticated night owls of Istanbul. In addition to the fab views, the bar is famous for its extensive cocktail menu, including things like Caipirovska and Balalaika, two drinks I've never even heard of. For those arriving with an appetite, the dinner menu offers some tantalizing options (slow-baked leerfish with tomatoes, capers, and olives; artichoke heart and Portobello salad with roasted red peppers and black-eyed peas). The festivities come indoors by the fireplace in winter. Open Monday to Thursday 11am to 2am, Friday 11am to 3am, Saturday 10am to 3am, and Sunday 10am to 2am.

This joint is so small, so intimate, and so New Orleans that you may have to pinch yourself to see if you are indeed in Istanbul. Reservations are essential for seating next to the tiny stage, although an additional handful of tables is up on the mezzanine. Live acts cover the full range of jazz interpretations, from classical to modern, to fusion to popular. For program listings, log on to www.nardisjazz.com. Q Jazz Bar cut its teeth in the cellar of the Çiragan Palace hotel before coming up to the hotel's garden terrace in summers. True to its elite lineage, Q now draws the cream of Istanbul society to its new location on the waterfront of Les Ottomans, where there's never an empty seat in the house. The bar and kitchen are open 7 nights a week, offering delectable appetizers such as lobster and caviar. Open daily 7pm until dawn. Live music begins at 11pm.

As the grande dame of after-hours entertainment, Reina is a veritable multiplex of popular restaurants, a handful of waterfront dance floors, and bars, including the Zagat-rated Park Samdan (reservations required for all restaurants). The music, and the crowd, is eclectic; pretty much anything goes. Open daily in the summer from 7pm to 4am.

This Istiklal wine bar looks like any other storefront cafe, but just a few steps down to the cellar -- where those in-the-know head -- is a late-19th-century underground aqueduct that is said to run from the British Embassy all the way to Tophane. The wine bar stocks more than 100 labels, including some of the better Turkish vintages. Try the Sarafin Cabernet, or the Karma Cabernet/Özküküzü blend. Open daily from 11am to 2am.

When asked for insider information on where the locals go, it is a rare response that includes an American-style brewery. But therein lies the paradox: They're certainly not going to the Turkish Night show in the Galata Tower. Taps dispenses seven or eight home-brews, along with a menu typical of this format (finger foods, pizza, salads, wraps, and pasta). The original outlet is in Nisantasi (Tesvikiye Cad., Atiye Sok. 5; tel. 0212/296-2020) but this is more central. Open daily 11:30am to 2am.

Istanbul's nightspots may come and go, but after 15 years, the popularity of this grand dame of a nightclub on the Bosphorus shows no signs of abating. An unbeatable location on the hilltop of Ulus, which translates into one of Istanbul's original unbeatable views of the Bosphorus, practically sealed its fate. One of the owners, Zeynep Fadillioglu, who is an interior designer, likes to stay ahead of design trends and updates the decor annually. I can say, though, that each incarnation is even more plush, more rich, more lavish than the one before. The main event happens on the outdoor terrace -- a collection of transparent netted tents enclose private dining or lounging areas. The international and Asian fusion menu gets mixed reviews, but gets an A+ for inventiveness. The restaurant is open daily noon to 4pm and 7pm to midnight. The bar is open until 4am in summer. 

V.S.O.P. Bar

Designed to re-create a traditional English library, V.S.O.P. is an elegant and definitely mature locale on the mezzanine level of The Marmara Istanbul Hotel. While  try to avoid hotel bars, this is actually an enjoyable spot for a drink and conversation. Open daily from noon to 11pm (later on weekends).

A veritable institution in Beyoglu, Viktor Levi is one of Istanbul's oldest wine houses. The fer forgé is the first indication of the 19th-century origins of the wine bar; it's a great spot to head to if you're looking to "go where the natives go" (if there is only one such place). Impress your date by ordering a bottle of the Viktor Levi special house wine. Open daily 11am to 2am.
